Six Basic Nutrients and Their Functions


There are six classes of essential nutrients necessary for human survival: carbohydrates, proteins, lipids, vitamins, minerals and water. The best way to get these nutrients is by following a varied, healthy diet featuring plenty of fresh vegetables and fruits, whole grains, lean proteins, nonfat dairy products and healthy fats. Dietary requirements vary with age and sex. Consult your physician or a registered dietitian about the diet that is best for you.

Carbohydrates

Carbohydrates are a major energy source. Along with providing fuel for physical activity, they also power the body's involuntary functions, including heartbeat, breathing and digestive processes. Food sources of carbohydrates include grains and grain products, vegetables, fruits, legumes, dairy products and sugars. Carbohydrates should supply 40 to 60 percent of the average person's caloric intake.

Proteins

Skin, muscle and bones depend on dietary protein for normal growth, development and maintenance. Getting enough protein is rarely a problem in industrialized countries such as the U.S. Complete proteins from animal sources contain all the amino acids your body needs for normal functioning. Plant sources only contain incomplete proteins, meaning some amino acids are missing. If you do not eat much meat, poultry, fish or other animal products, eat a variety of protein-rich plant foods such as beans, nuts and whole grains to ensure an optimal combination of amino acids.

Lipids

You may think of lipids, or fats, as dietary enemies, but they are as necessary to the body's normal functioning as the other essential nutrients. Dietary fat helps the absorption of vitamins, supports cell membrane health and helps maintain the immune system. Not all fats are equal. Choose healthy unsaturated fats such as olive oil and nut oil instead of saturated fats from fatty meats.

Vitamins and Minerals

Vitamins are micronutrients, meaning the body needs them in small quantities. Vitamins are organic compounds produced by living beings, while minerals are inorganic elements that originate in the earth. Vitamins and minerals support the body's biochemical processes. Each of the vitamins and minerals has a distinct function, including regulating metabolism, guarding the cells from oxidative stress and synthesizing hormones.

Water

Comprising 60 percent of your body weight, water is vital for the normal functioning of all your body's systems. It helps cleanse your body of wastes and toxins, carries essential nutrients to your cells, lubricates your joints and helps maintain your body temperature. While the rule is to drink eight glasses of water daily, this maxim is not supported by scientific evidence. If your urine output is about 6 cups per day, your urine is slightly yellowish or clear and you don't often feel thirsty, your water intake is likely adequate.

How Much Fish Oil Is Safe to Take & What Are Benefits & Risks?


Fish oil is found in fatty fish such as mackerel, tuna, sturgeon, trout and salmon, and also in supplements made from these. Fish oil contains two different omega-3 fatty acids, eicosapentenoic acid, or EPA, and docosahexenoic, or DHA, both of which have heart healthy benefits. Despite these advantages, be aware that mild and severe health risks are associated with high supplement dosages.


How Much is Enough?



Eat fatty fish twice a week, advices the American Heart Association. A 3.5-oz. portion of fatty fish provides approximately 1 g of omega-3 fatty acids. Get your omega-3 requirements met through food before resorting to supplements; however, if you do take fish oil pills limit your intake to 3 g per day. Discuss possible higher dosages with your physician.
Benefits

Research demonstrates the heart healthy effects of fish oils both for individuals with cardiovascular disease and for those without a history of heart problems. According to the American Heart Association, omega-3 fatty acids decrease abnormal heart beat and heart attack risk, slow hardening of the arteries and slightly lower blood pressure. In addition, fish oils lower blood triglyceride levels by 20 to 50 percent. It is also theorized that fish oils reduce fatalities caused by heart attacks more than the prescription drugs known as statins do.

Risks

Taking fish oil in amounts greater than 3 g is considered unsafe, warns the UC Berkeley Wellness Guide. Mild side effects at this large dosage include nausea, belching or "fish burps," heartburn and diarrhea. Minimize these effects by taking supplements at mealtimes and gradually increase dosage amounts. More severe side effects caused by high dosages include an increased risk for excessive bleeding, stroke, elevated LDL cholesterol levels, immune system suppression and poor glycemic control in diabetic individuals.

Safety Concerns

Women who are pregnant or breast-feeding and young children should restrict fatty fish intake due to possible methylmercury content. This toxin is only found in fish meat, thus fish oil supplements are a safe substitute. Individuals allergic to fish should also avoid fish oil or omega-3 supplements manufactured from it. For those individuals with toxin contamination concerns, the American Heart Association advises individuals to cut off fish skin and the underlying fat layer prior to cooking. The benefits of fish oil consumption for older men and postmenopausal women outweigh any risks from possible toxin contamination.
Fish oils are known to interact with certain medications such as birth control pills and anti-hypertensive and anticoagulant drugs. Vitamin E levels can also decrease with fish oil supplementation. Consult your physician if you have concerns regarding fish oil and medication interaction.

Grape Seed Extract with Resveratrol Health Benefits


Grape seeds contain high concentrations of important nutrients. Antioxidants, such as vitamin E, flavonoids and OPCs--oligomeric proanthocyanidin complexes, as well as linoleic acid--an essential fatty acid--are constituents of grape seeds, while resveratrol, a similar compound to OPCs, is mainly found in grape skins, according to the University of Maryland Medical Center. Grape seed extract with resveratrol has become a popular supplement used to assist health and healing in a variety of conditions.

Chronic Venous Insufficiency

One of the most well-documented uses for grape seed extract is in the treatment of chronic venous insufficiency, a condition that leads to pooling of blood in the legs with accompanying pain and swelling. The OPCs in grape seed extract have been found to be effective at relieving these symptoms. A study of 40 patients with chronic venous insufficiency published in the 2002 journal Phytotherapy Research found improvement in symptoms after one month of treatment with grape seed extract.

Ulcerative Colitis

Resveratrol showed marked ability to inhibit ulcerative colitis in mice within seven days in a study published in the May 2010 Archives of Medical Research. Markers of inflammation were seen to decrease, and anti-inflammatory markers were seen to increase. The December 2008 Canadian Journal of Physiology and Pharmacology reported on the effect of grape seed extract on ulcerative colitis in rats and found it to inhibit inflammatory cell infiltration, suppress the inflammatory response and promote repair of damaged tissue.

Cholesterol

A study of the effects of grape seed proanthocyanidins on rats fed a high-fat diet for 13 weeks found that the grape extract normalized triglyceride and LDL--low density lipoprotein--levels. The study, published in the September 2009 International Journal of Obesity, concluded that proanthocyanidins have a powerful effect on prevention and treatment of lipid-induced cardiovascular disease.

Breast and Prostate Cancer

In a study on breast cancer published in the July 2010 Journal of Nutrition, reseveratrol was found to prevent silencing of the tumor-suppressing protein BRCA1. The May 2010 journal Blood Coagulation and Fibrinolysis reported on a study that examined the effect of grape seed extract on prostate cancer and found it to have an inhibitory effect on cell migration. The researchers concluded that grape seed extract had potential for preventing metastasis of prostate cancer.

Hypertension

Resveratrol was found to have anti-inflammatory and antioxidant effects and prevented the buildup of smooth muscle cells in the lining of pulmonary arteries in rats given 25 mg per kg of body weight per day. The study was reported in the September 2009 journal Hypertension. The researchers concluded that resveratrol may contribute to the prevention of pulmonary hypertension.

Antioxidants: What You Need to Know


What are antioxidants?

The cells in your body are exposed to oxygen every day. Oxygen is important for your body’s health, but exposure to oxygen also causes oxidation. In oxidation, body chemicals are altered and become what are known as free radicals. Exposure to environmental factors, such as sun exposure, cigarette smoke, alcohol and pollution, also creates free radicals.

Over time, free radicals can cause a chain reaction in your body that damages important body chemicals, DNA and parts of your cells. Some cells can heal, while others are permanently damaged. Scientists believe free radicals may contribute to the aging process as well as diseases like cancer, diabetes and heart disease.

Antioxidants are natural substances that may stop or limit the damage caused by free radicals. Your body uses antioxidants to stabilize the free radicals. This keeps them from causing damage to other cells. Antioxidants can protect and reverse the damage caused by oxidation to some extent.

Where are antioxidants found?

Your body produces some antioxidants to fight off the free radicals formed by normal body processes. Your body can also get antioxidants by eating a healthy diet. Examples of antioxidant-rich foods include fruits and vegetables that are high in nutrients such as vitamins A, C and E, beta-carotene, lutein, lycopene and selenium.

What foods are good sources of antioxidants?

To get the most antioxidants, eat a diet that includes a healthy mix of colorful fruits and vegetables and other antioxidant-rich foods:

  • Vitamin A is found in milk, liver, butter and eggs.
  • Vitamin C is found in most fruits and vegetables. Those with the highest amounts of vitamin C include papayas, strawberries, oranges, cantaloupe and kiwi, as well as bell peppers, broccoli, Brussels sprouts, tomatoes, cauliflower and kale.
  • Vitamin E is found in some nuts and seeds, including almonds, sunflower seeds, hazelnuts and peanuts. It can also be found in green leafy vegetables, such as spinach and kale, and in oils, such as soybean, sunflower, corn and canola oils.
  • Beta-carotene is found in colorful fruits and vegetables, including carrots, peas, cantaloupe, apricots, papayas, mangoes, peaches, pumpkin, apricots, broccoli, sweet potatoes and squash. It can also be found in some leafy green vegetables, including beet greens, spinach and kale.
  • Lutein is found in green leafy vegetables, such as spinach, collards and kale, broccoli, corn, peas, papayas and oranges.
  • Lycopene is found in pink and red fruits and vegetables, such as pink grapefruit, watermelon, apricots and tomatoes.
  • Selenium is found in cereals (corn, wheat and rice), nuts, legumes, animal products (beef, fish, turkey, chicken, eggs and cheese), bread and pasta.
While foods that are rich in vitamin E and beta-carotene are very healthy and help reduce cancer risk, the U.S. Preventive Services Task Force and the American Academy of Family Physicians recommend against taking vitamin E or beta-carotene supplements for the prevention of cancer. People who smoke or have a high risk for lung cancer should not take supplemental beta-carotene because it can increase the risk of lung cancer.

The best way to get antioxidants is by eating a diet with lots of vegetables, fruits, whole grains, seeds and nuts. Variety is also important.

6 Essential Nutrients and Their Functions




An essential nutrient is a nutrient that the body cannot synthesize on its own -- or not to an adequate amount -- and must be provided by the diet. These nutrients are necessary for the body to function properly. The six essential nutrients include carbohydrates, protein, fat, vitamins, minerals and water.

Carbohydrates

Carbohydrates are the main energy source for the brain. Without carbohydrates, the body could not function properly. Sources include fruits, breads and grains, starchy vegetables and sugars. Make at least half of the grains you consume whole grains. Whole grains and fruit are full of fiber, which reduces the risk of coronary heart disease and helps maintain normal blood glucose levels.

Protein

Protein is the major structural component of cells and is responsible for the building and repair of body tissues. Protein is broken down into amino acids, which are building blocks of protein. Nine of the 20 amino acids, known as essential amino acids, must be provided in the diet as they cannot be synthesized in the body. Ten to 35 percent of your daily calories should come from lean protein sources such as low-fat meat, dairy, beans or eggs.

Fat

Fat is an energy source that when consumed, increases the absorption of fat-soluble vitamins including vitamins A, D, E and K. Twenty to 35 percent of your daily intake should come from fat. Choose healthy options such as omega-3-rich foods like fish, walnuts and vegetable-based oils. Omega-3s help with development and growth. Limit intake of saturated fats such as high-fat meats and full-fat dairy. Other smart choices include nuts, seeds and avocado.

Vitamins

Vitamin C is necessary for the synthesis of collagen, which provides structure to blood vessels, bone and ligaments. Rich sources include citrus fruits, strawberries and peppers. Folate, found in foods, helps to prevent birth defects. Pregnant women or women who plan to become pregnant should speak with their physician about taking a folic acid supplement, the synthetic form of folate, in addition to their diet. Vitamin D helps to maintain calcium homeostasis. It can be found in food sources or synthesized by the sun.

Minerals

Sodium helps to maintain fluid volume outside of the cells and helps cells to function normally. Keep intake under 2,400 milligrams per day. Potassium maintains fluid volume inside and outside of cells and prevents the excess rise of blood pressure with increased sodium intake. Rich sources include bananas, potatoes and tomatoes. Calcium helps to maintain and build strong bones and teeth. Include three servings of calcium-rich foods per day including milk, low-fat cheese and yogurt.

Water

Water helps to maintain homeostasis in the body and transports nutrients to cells. Water also assists in removing waste products from the body. All beverages and high-moisture foods such as soup and watermelon contain water and count towards your daily water requirement. Adults should consume 25 to 35 milliliters of fluids per kilogram body weight or 2 to 3 liters per day.

What Are the Health Benefits of Eating Fresh Vs. Frozen Fish?


Although it might seem that fresh fish would a healthier choice than frozen, the truth is that both fresh and frozen fish can be healthy choices, as long as you store and prepare them properly. The freshness of the fish, along with how it was frozen and how quickly it was frozen, can impact its taste and texture, as well as its bacterial content.

Spoiling

Both fresh and frozen fish can spoil. Eating fish within a few days ensures that it doesn't have time to spoil. Store fresh fish for no longer than one to two days in the refrigerator before eating. Frozen fish can spoil if it thaws during transport. Look for signs of possible spoilage, such as rips or tears in the packaging. Don't refreeze seafood once it thaws. If you buy frozen fish, don't pick packages stored above the chill line. If fresh fish has an ammonia-like odor, it might be starting to spoil.

Bacterial Contamination

Freezing fish halts bacterial growth that can make you sick. Eating fresh fish or keeping it in the refrigerator can also retard bacterial growth. Bacteria also can grow during the thawing process, if you thaw fish in warm environments such as the kitchen. Thaw fish in a bowl of cold water or in the refrigerator.

Nutrition

Freezing doesn't reduce the nutritional content of fish, in most cases. Protein, fat and fat-soluble vitamins such as vitamins A and D aren't affected by the freezing process itself. But when you thaw the fish, you can lose some of the water content as the fish thaws. The water can contain some of the water-soluble vitamins and minerals. If you use all the water lost from the fish for cooking, you will retain the vitamins and minerals. Because fresh fish doesn't lose any of its water content, it won't lose any vitamins or minerals.

Taste and Appearance

While they don't affect your health directly, the taste and appearance of fish can affect your willingness to eat it. Because fish contains lean protein and essential omega-3 fatty acids, it's a valuable addition to your diet. Most people can't tell the difference between fresh and appropriately frozen fish, the Alaska Seafood Marketing Institute says on the What Cooking America website. Fish can turn slightly mushy, with an unappealing texture, if thawed in warm water or in a warm room.

What is the digestive system?


The digestive system

The digestive system is made up of the gastrointestinal (GI) tract—also called the digestive tract—and the liver, pancreas, and gallbladder. The GI tract is a series of hollow organs joined in a long, twisting tube from the mouth to the anus. The hollow organs that make up the GI tract are the mouth, esophagus, stomach, small intestine, large intestine—which includes the rectum—and anus. Food enters the mouth and passes to the anus through the hollow organs of the GI tract. The liver, pancreas, and gallbladder are the solid organs of the digestive system. The digestive system helps the body digest food.

Bacteria in the GI tract, also called gut flora or microbiome, help with digestion. Parts of the nervous and circulatory systems also play roles in the digestive process. Together, a combination of nerves, hormones, bacteria, blood, and the organs of the digestive system completes the complex task of digesting the foods and liquids a person consumes each day.

Why is digestion important?
Digestion is important for breaking down food into nutrients, which the body uses for energy, growth, and cell repair. Food and drink must be changed into smaller molecules of nutrients before the blood absorbs them and carries them to cells throughout the body. The body breaks down nutrients from food and drink into carbohydrates, protein, fats, and vitamins.

Carbohydrates. Carbohydrates are the sugars, starches, and fiber found in many foods. Carbohydrates are called simple or complex, depending on their chemical structure. Simple carbohydrates include sugars found naturally in foods such as fruits, vegetables, milk, and milk products, as well as sugars added during food processing. Complex carbohydrates are starches and fiber found in whole-grain breads and cereals, starchy vegetables, and legumes. The Dietary Guidelines for Americans, 2010, recommends that 45 to 65 percent of total daily calories come from carbohydrates.

Protein. Foods such as meat, eggs, and beans consist of large molecules of protein that the body digests into smaller molecules called amino acids. The body absorbs amino acids through the small intestine into the blood, which then carries them throughout the body. The Dietary Guidelines for Americans, 2010, recommends that 10 to 35 percent of total daily calories come from protein.

Fats. Fat molecules are a rich source of energy for the body and help the body absorb vitamins. Oils, such as corn, canola, olive, safflower, soybean, and sunflower, are examples of healthy fats. Butter, shortening, and snack foods are examples of less healthy fats. During digestion, the body breaks down fat molecules into fatty acids and glycerol. The Dietary Guidelines for Americans, 2010, recommends that 20 to 35 percent of total daily calories come from fat.

Vitamins. Scientists classify vitamins by the fluid in which they dissolve. Water-soluble vitamins include all the B vitamins and vitamin C. Fat-soluble vitamins include vitamins A, D, E, and K. Each vitamin has a different role in the body’s growth and health. The body stores fat-soluble vitamins in the liver and fatty tissues, whereas the body does not easily store water-soluble vitamins and flushes out the extra in the urine.

Potential Benefits of Multivitamins



Multivitamins are dietary supplements that come in tablet, capsule or pill form and provide you with an array of essential vitamins and minerals. You can find them in most grocery stores, as well as health food stores. Taking a multivitamin every day may provide several health benefits. Before taking vitamins, consult your doctor; pre-existing medical conditions or medications you are taking can affect how your body responds to multivitamins.

Illness Recovery

For example, some vegans may have low levels of certain B-vitamins that are chiefly found in animal products but can get the vitamins through a daily multivitamin.

Prenatal Health and Lower Birth Anomalies

A pregnant woman has much higher vitamin needs than a non-pregnant woman because she's supporting the life and nutritional needs of her baby. Thus, a doctor may suggest a pregnant woman take prenatal multivitamins that provide a wide array of vitamins designed to provide the nutrients needed by the woman and the baby. Regular use of a prenatal multivitamin can help decrease the risk of numerous congenital anomalies in the baby, according to an August 2006 meta-analysis published in the "Journal of Obstetrics and Gynaecology Canada," a peer-reviewed medical journal that focuses on women's health, obstetrics and gynecology. The meta-analysis analyzed the results of 41 studies.

Improved Cognitive Functioning

As people age, their cognitive functioning may decrease. A May 2007 medical research study published in "Nutrition Journal" analyzed 910 women and men ages 65 or older. The study found that the use of a multivitamin helped reduce the risk of micronutrient deficiencies and also helped to improve cognitive functioning in some of the group's subsets, including those ages 75 and older.

Improved Energy

Multivitamins contain several vitamins, such as B-complex vitamins and vitamin C, that may help improve your body's energy. Arizona State University's wellness office suggests students take a daily multivitamin for improved energy and a better physical response to the various stress factors encountered in college life.

Why Use Supplements?


There’s no doubt that a healthy diet is essential for optimal heart health. But there are also a number of factors that make nutritional supplementation an important part of maintaining a healthy body and cardiovascular system.

Diet.
No matter how well you eat, it’s almost impossible to consistently provide your body with the right amount of nutrients day in and day out. You see, actual walking speed isn’t as important as we’ve been led to believe. In a two-week Dutch study reported in the journal Nature,researchers found that moderate activity was actually superior to vigorous exercise for expending energy. However, if you want to use a heart-rate monitor to pace yourself, that’s great—but go no higher than 70 percent of your maximal heart rate. To get a rough idea of your maximal heart rate, subtract your age from 220. Multiply the answer by 0.70; the result is your target heart rate.

Drugs.
Many prescription medications deplete the body of essential nutrients, which can lead to notable deficiencies that can affect heart health.

Age.
As we get older our bodies tend to produce less of certain nutrients, making supplementation crucial.

Exercise level.
Even moderate exercise can generate free radicals—which are known factors in heart disease and other illnesses. But antioxidant supplementation can offset the damaging effects of free radicals.

Must-Have Supplement #1: High-Potency Multinutrient

To provide your body with broad, overall nutritional support, I recommend starting your supplement regimen with a high-potency multinutrient. A quality multi will even out the natural fluctuations in your diet and help offset age- and medication-related deficiencies. Look for a multi that includes all essential vitamins and minerals (especially B vitamins), as well as flavonoids and carotenoids. One popular way to get your heart-healthy EFAs is by taking fish oil or other marine animal (krill or squid) supplements, which can be found at health food stores and grocery stores. However, be selective when shopping. Because our ocean waters are getting more polluted, fish can be contaminated with heavy metals and toxic chemicals; and the large factory ships that catch the fish don’t always do a very good job of processing it right away, which means oils can oxidize even before they’re put into capsules. So, look for a fish oil product that can guarantee freshness, preferably one that includes antioxidants such as rosemary extract and vitamin E to ensure stability and freshness. Also, choose a supplement that delivers at least 150 mg of the EFA eicosapentaenoic acid (EPA) and 350 mg of the EFA docosahexaenoic acid (DHA).
Other Supplement Recommendations

Along with my core supplement recommendations of a daily multinutrient and omega-3 fatty acids, I suggest adding certain supplements based on your specific health needs. And everyone with concerns about heart health should take the “Awesome Foursome.” That’s my name for the four supplements I believe are most crucial for energy production inside cells. This is particularly important in the heart, because the heart requires more energy than any other organ in the body. The more energy it can produce, the more efficient it will be.

These Are a Few Of Best Greens


Most people eat at least one vegetable that's green. Whether it's spinach, broccoli, green beans, peas or all the above, rarely is there a person that does not eat any.From an early age we have our parents and grandparents tell us to eat our greens and even the media, like Popeye, teaches us to eat our spinach so we get stronger. However, these are greens we all grew up on. There are many more greens out there which you may not even be familiar with but should be a part of any healthy and varied diet. Some of my favorites that are currently available are: arugula, chard and bok choy.

Bok Choy also known as Chinese cabbage, is not a leafy green but a type of cabbage. It has a very subtle somewhat sweet flavor. To combine all 3 together here is a cool stir fry recipe:
3 cups chopped chard
3 cups chopped bok choy
1 medium yellow onion chopped
2 garlic cloves, minced
1 Tbsp olive oil
2 Tbsp teriyaki
0.5 tsp red pepper flakes
1 -2 cup arugula

Turn stove on medium. Heat oil in pan. Add onions and stir until slightly translucent (4-5 minutes). Add garlic and stir for 2-3 minutes. Add chard and bok choy stir for about 5 minutes. Add teriyaki and red pepper flakes. Stir until stalks are soft (about 5-7 minutes). Move hot stir fry into serving bowl. Add arugula and stir. Serve hot or cold. Note; you can also add chicken breast or shrimp to make this a complete meal

Greens can be way more interesting than just your usual 4 or 5. Experiment a little and you'll be surprised at what you discover.

Do You Know How to Read a Food Label?


Before putting together a new piece of furniture, playing a board game or starting a complicated project, you usually begin with one important step: reading the instructions. Without the instructions, you don't know what the end result will look like, if you'll be a winner and, ultimately, whether the project is worth your time.
Now consider your approach to eating. Do you carefully read the food label on a new food before trying it? Do you evaluate it to determine exactly what it offers you? Most people read one or two lines, possibly to check on carbs or maybe calories. While these two items are important, it's essential to carefully evaluate the entire food label and understand how it fits into the context of your day.

Start with the serving size

Always begin by reading the serving size, which is located at the very top of the nutrition facts panel. Skip this step and you could be fooled into thinking that a food is a good choice for you when it really isn't -- thinking it's just one portion when it actually contains three. While there's talk of altering food labels so that the serving size matches the size of the package (think of that "single portion" of chips or bottle of soda that is actually two or three servings), it will always be very important to read serving size first.

Consider the food -- then check the calories, protein, fat and carbs

Now that you know the serving size, consider the food as a whole. Noting the calories is obviously very important, but more important is to note the calories and the protein and fat. Think of it like this: Calories, protein and fat will fill you up. Calories alone will make you hungrier and ultimately add calories to your day. (Yup, we're looking at you, fat-free, 100-calorie pack with just one or two grams of protein.)

What is that %DV anyway?

%DV refers to Percent Daily Value, which helps us determine whether a food is high or low in a particular nutrient, based on a 2,000 calorie diet. While it's helpful to know if a food offers a lot (20% DV) or a little (5% DV) of a particular nutrient, it's not a perfect guide for anyone who isn't following a 2,000-calorie diet or those of us who don't know how many calories we need (aka most of us). Use the %DV to help you generally determine if a food is a good source of, say, fiber, and low in what you are trying to limit, such as sodium.

Total fat vs. type of fat

The type of fat matters more than total fat. Recall that fat is important for satisfying us to control hunger and that our heart-healthy fats, such as poly- and monounsaturated fats actually benefit us, while saturated fat should be limited and trans fats avoided. With this in mind, the type of fat matters far more than the total fat per serving.

Loads of vitamins

As you work your way down the food label, you'll find a list of the vitamins and minerals and the %DV offered for each. In most cases, a food rich in several vitamins and minerals has been fortified with synthetic nutrients. While fortification aids in our regular consumption of these nutrients, it's important to remember to consume whole foods that naturally provide these nutrients instead of only relying on fortified foods.

Dietary fiber to determine if it's really whole grain

The front of a package may advertise that a product contains whole grains, but the proof is on the nutrition facts panel. If a product doesn't contain 20 percent or more of the %DV for dietary fiber, then it's not considered a significant source of fiber.

The Vitamins You Should or Shouldn't Be Taking


In the early 1900s, Americans consumed all of their nutrients by eating food. In 2007, vitamin supplement sales topped $23.7 billion in the United States, according to the American Dietetic Association. But consuming more vitamins does not necessarily add up to improved health. How do you know what vitamins you need to take, if any, and what amount is appropriate?

Find Out What You're Missing

After moving from Florida to New York and starting a night job, Heidi Smith felt like she was always running on empty. "For years I thought I was just a grumpy, low-energy person," Smith explained. "I wish I'd known sooner that I just lacked vitamin D."

Working at night limited her exposure to the UV rays that help the body synthesize vitamin D. "Plus," she admitted, "I was eating pretty badly." When therapy and antidepressants failed to do the trick, she visited her physician, who tested her vitamin D levels and discovered a severe deficiency -- one that dietary changes alone would not rectify. Since being treated for a vitamin D deficiency, Smith has seen huge improvements in her energy level, "as though a cloud has been lifted," she said.

Most health-care practitioners agree that whole, natural foods remain the optimum source of nutrients. If your diet is lousy or your body's ability to absorb vitamins is compromised, however, you may require supplements. Registered dietitian Lauren Schmitt recommends that populations at risk for not meeting their nutrient needs, such as elderly adults, pregnant women and children, consider a basic multi-vitamin supplement. Women who experience heavy menstrual bleeding, strict vegans and vegetarians, and anyone who consumes fewer than 1,600 calories daily or can't stick to a balanced diet may also require supplements.

Various medical conditions, such as chronic digestive diseases and food intolerances, also create a need for vitamin supplements. Though numerous natural health-care practitioners use blood tests that supposedly check your nutrient levels, the tests lack scientific validity. If your doctor suspects a vitamin deficiency, he will likely run standard health tests, such as checking your blood cell counts, glucose levels, electrolytes and organ function. He will also ask you questions about your diet and lifestyle. In other words, vitamin deficiencies are diagnosed based on the symptoms they present and confirmed by your doctor's assessment of your overall health and dietary habits.

Common Deficiencies

Though people's specific dietary needs vary, certain nutrients are commonly lacking in the typical American diet.

Even if you consume a relatively healthy diet, you may be missing particular nutrients. The vitamin supplement most people should consider taking is vitamin D, according to Luigi Gratton, clinical nutrition specialist at the UCLA Risk Factor Obesity Program—the nutrient that had such a powerful impact on Smith's life. “Most folks in North America are deficient,” Gratton explains. The U.S. Institute of Medicine of the National Academy of Sciences recommends 5 micrograms of Vitamin D daily for those under 50.

Vitamin D is essential for proper calcium absorption and healthy bones. It also enhances your immune system and, for severely deficient people like Smith, your moods. If you rarely spend time outside and do not consume vitamin D-fortified dairy products, fish and other seafood regularly, discuss your need for vitamin D supplementation with your doctor.

Deficiencies of other vitamins are uncommon in people who live in the United States. If you consume a strict vegetarian or vegan diet, or suffer from the autoimmune disorder known as pernicious anemia, you may lack vitamin B12. The nutrient is found mainly in animal-derived foods and plays a major role in brain function, blood cell production and fatigue prevention. If you have a disorder that causes nutrient malabsorption, such as celiac disease or Crohn's disease, you may have difficulty absorbing all nutrients, particularly if you fail to manage your disorder appropriately.

The American Dietetic Association recommends consuming more of the B vitamin folate -- or the synthetic form, folic acid -- if you are pregnant, nursing or may become pregnant. Prenatal vitamins generally contain sufficient amounts of folate, as do whole grains.

Daily Dose: The Vitamins You Should or Shouldn't Be Taking


Consuming plentiful amounts of nutrients from food sources rarely causes problems. Excessive intake of most any vitamin supplement, however, can lead to a broad range of side effects, some of which are serious.

Vitamin supplements have been linked to nausea, diarrhea, stomach cramping, reduced cognitive abilities, interactions with medications and even death. For example, taking excessive doses of vitamin A in supplement form causes hypervitaminosis A -- a condition characterized by liver abnormalities, reduced bone density and birth defects. Excessive intake of vitamin B12, though not associated with toxic effects, can interact with medications, such as certain antibiotics and diabetes medications. Schmitt also describes taking unnecessary supplements as “not good use of your hard-earned money.”

To prevent unwanted side effects, avoid vitamin supplements that contain mega amounts -- more than 100 percent of the recommended daily allowance -- of particular nutrients and those that promise miraculous benefits. By law, the standard RDA is always listed on product packaging. Find that fine print and read it before taking any new supplement.

Antioxidants – what’s the hype?



Everyone’s talking about antioxidants! They are one of the main reasons we should eat lots of vegetables and fruit, and the basis for the particular health benefits of blueberries and other dark-coloured berries. But what exactly are antioxidants, and why do we need them?

What are antioxidants?

An antioxidant is any substance that stops the damaging action of an ‘oxidant’ (sometimes known as a ‘free radical’). In chemical terms, oxidants are molecules that have an unpaired electron in their outer shell. To fill the shell, they steal electrons from other molecules, damaging them and turning them into oxidants too, which can then go on to harm other molecules. Antioxidants provide an electron for the rogue molecule, ‘neutralising’ it and preventing this from happening.

When there is lots of free radical activity in our cells, and not enough antioxidants to quench the free radicals, our cells and their DNA can be damaged. If this affects enough cells, problems can start to occur – even degenerative diseases such as heart disease. Free radical damage is also thought to be one of the reasons for ageing, including ageing of our skin. Many good reasons to up your antioxidant intake!

Types of antioxidants

Some of the antioxidants that we need are made in our own body. These include two vitally important substances called glutathione and superoxide dismutase. Other antioxidants come from the food we eat. Vitamins C and E act as antioxidants, although they have many other vital roles in our body too. The minerals zinc, selenium and manganese are sometimes considered antioxidants, but they don’t act directly in this way – they are used by the body to make antioxidant molecules such as glutathione. Coenzyme Q10 and alpha lipoic acid are two other vitamin-like substances that have powerful antioxidant effects – our body can make them but we can also get small amounts of in our food.

In addition, lots of other plant substances (‘phytonutrients’) can act as antioxidants when we consume them. They include carotenoids such as beta carotene, and a wide group of substances called flavonoids that includeanthocyanidins, flavonols and catechins.

What foods do I get them in?

To be in optimal health, we need a wide range of these antioxidants. These should come from a varied diet based on whole foods and lots of vegetables and fruits.

Here are some of the main sources of different antioxidants:

*Vitamin C is found in most vegetables and fruit – but the best source is not necessarily oranges! Peppers, kale, broccoli, Brussels sprouts, watercress and red cabbage can contain more.

*Vitamin E is found in avocadoes, nuts and seeds, nut butters such as almond butter, wheat germ, and rice bran.

*Carotenoids are found mainly in orange, yellow and red vegetables and fruits, such as carrots, pumpkin, sweet potato, apricots and yellow peppers. They are also found in green vegetables such as kale and spinach.
Catechins are found in green tea and are the main reason for its celebrated health benefits. Catechins are also contained in berries and other fruits, as well as dark chocolate (choose chocolate containing least 70% cocoa to get a decent amount of catechins).

*Anthocyanidins are found in the highest levels in blue, black, red and purple fruits and vegetables – they are the pigments that give these foods such wonderful colours. Think blackberries, blueberries, raspberries, pomegranates, red grapes, red cabbage and purple carrots.

*Selenium and zinc are contained in nuts and seeds, seafood, organ meats such as kidney and liver, and other good quality meats.

*Source of alpha lipoic acid include red meat, spinach, broccoli, carrots, sweet potatoes and beetroot.

*Coenzyme Q10 is found in small amounts in meats and seafood.

The herb is native to northern Europe and has long been used as a folk remedy in Scandinavian countries as well as in Russia. A study at the Department of Neurology at the Armenian State Medical University in Yerevan found that doctors who were stressed and fatigued from working the night shift experienced a boost in mental functioning and energy levels from taking a low-dose rhodiola rosea supplement for 2 weeks.

Ginseng is an herb that comes in three main varieties: Siberian, Panax (Asian) and American. All three ginseng herbs are sometimes recommended by herbal practitioners from various alternative therapy traditions for patients who are feeling fatigued. Studies have proven largely inconclusive about the benefits of the herbs thus far due to mixed results. The Natural Medicines Comprehensive Database states that Panax ginseng is "likely effective" at improving thinking and "possibly effective" at increasing athletic performance, possibly by boosting energy.

You should discuss the use of any vitamin or herbal supplementwith your physician and pharmacist before beginning a supplemental regimen. While energy supplements are generally safe when used as directed, they may pose health risks to certain individuals, such as people with some cardiovascular issues or those who take specific medications. This is the definition of addiction.

Wheat can be toxic for some people and can attack the gut; ultimately this can lead to leaky gut syndrome. From the time food enters your mouth until it leaves your body, your gut wall separates what you ingest from the rest of your body. Normally, a healthy digestive system breaks down your food and only lets simple, small molecules like vitamins, minerals, simple sugars, and amino acids get absorbed and pass into your blood stream. But when the digestive tract’s barrier becomes too permeable allowing contents like allergens and toxins to pass through to the body, then you have got a leaky gut. Sugar could be considered the most widely consumed addictive substance in the world. One study found that sugar can be more addictive than cocaine. The only difference is sugar is a socially acceptable drug.

Researchers have discovered that a diet high in sugar can substantially alter the bacterial composition in the gut, causing dysbiosis, which is more bad bacteria vs. good bacteria. Sugar can be very damaging to the system as it also feeds the candida yeast as well as feeding cancer.

How to Transition from Wheat & Sugar?

If you find yourself having sugar cravings and constantly needing to eat wheat or sugar, then you are addicted. As with all addictions, first you must recognize the issue and then work to eliminate these foods from your diet. It is the only way to change your body’s cravings. A good first step that I often recommend to my clients is to incorporate fermented foods such as sauerkraut and pickles in brine. Another way is to consume beverages that are high in probiotics, like these.

The sour taste of these foods will slowly remove your craving for sweet foods. At the same time it will restore your inner ecosystem and the good flora, good intestinal bacteria, which impacts your digestion and nutrients your body absorbs.

I also suggest to my clients to incorporate vitamin and mineral dense foods into your diet such as dark green vegetables, ocean vegetables, and antioxidant rich berries. These foods help heal the gut, cleanse toxins, and revitalize the body on a cellular level.

Dairy in its natural form is not the issue, but the side affects of pasteurization have a dramatic impact. The origin of heating wine for preservation dates back to the 10th Century in China, however the modern version was refined in 1862 by Louis Pasteur. In his desire to eliminate certain disease-carrying germs and prevent the souring of milk, Pasteur developed the pasteurization process we use today. Experts say there is definitely a place for vitamin or mineral supplements in our diets, but their primary function is to fill in small nutrient gaps. They are " supplements" intended to add to your diet, not take the place of real food or a healthy meal plan.

Vitamins and other dietary supplements are not intended to be a food substitute. They cannot replace all of the nutrients and benefits of whole foods.

"They can plug nutrition gaps in your diet, but it is short-sighted to think your vitamin or mineral is the ticket to good health -- the big power is on the plate, not in a pill," explains Roberta Anding, MS, RD, a spokesperson for the American Dietetic Association and director of sports nutrition at Texas Children’s Hospital in Houston.

It is always better to get your nutrients from food, agrees registered dietitian Karen Ansel. "Food contains thousands of phytochemicals, fiber, and more that work together to promote good health that cannot be duplicated with a pill or a cocktail of supplements."

When the food on the plate falls short and doesn’t include essential nutrients like calcium, potassium, vitamin D, and vitamin B12, some of the nutrients many Americans don’t get enough of, a supplement can help take up the nutritional slack. Vitamin and mineral supplements can help prevent deficiencies that can contribute to chronic conditions.


Numerous studies have shown the health benefits and effectiveness of supplementing missing nutrients in the diet. A National Institutes of Health (NIH) study found increased bone density and reduced fractures in postmenopausal women who took calcium and vitamin D.
